Trout and Parma Ham

Needed Products:

  • 4 slices Parma ham
  • 2 trout fillets
  • 2 tablespoons butter
  • 4 sage leaves
  • 1 bunch parsley, chopped
  • 1 lemon, to serve

Preparation:

The dish is very easy-to-prepare and it won’t take more than half an hour. Switch on your oven and preheat it to 180C. While waiting for it, you will get the fish ready for baking. Lay two slices of the Parma ham horizontally on a flat surface, you have to overlap them a little bit. Place a sage leaf in the middle of the ham, and lay one of the trout fillets vertically over it to form a cross shape with the ham. Put another sage leaf over the fish and a small knob of butter. Roll the ham so to cover the fish, but leave its ends hanging. Punch the ends with a skewer and place the first roll in a casserole dish. Repeat the procedure with the second roll, and bake the meal in the oven for fifteen to twenty minutes.

While waiting for the rolls to bake you can squeeze some lemon juice and mix it with the parsley. Once the dish is ready, take it out of the oven and pour this mixture over it. Serve while it is still warm, with a slice of lemon and a tablespoon of the buttery sauce in the casserole.

Consume with a glass of cool white wine, and garnish with potato salad or stewed vegetables. If you want you can use other herbs, such as rosemary, for this dish, too.
